The Buckhorn Exchange is the oldest Restaurant in Denver. It's a mix of yak steaks and buffalo burgers paired with very good wine. Yeap, wine. I can imagine the grizzled old prospectors sipping a light claret under the mange ridden rotting heads of game that cover the faded velvet walls. At any rate, it's only a block from NOISE and tonight I thought it was on fire. I'm glad I was wrong and it will live to serve the beef another day. Adios. www.bymiles.org
